Healthy Veggie Burgers Recipe

Healthy Veggie Burgers RecipeIngredients (Serves 4)

  • 350 g potatoes, peeled and cubed
  • 3 tbsp semi skimmed milk
  • 1 tsp margarine
  • 1 small onion, peeled and finely chopped
  • 1 clove garlic, crushed
  • 3 tbsp vegetable oil
  • 350 g frozen mixed vegetables (thawed and blotted dry)
  • 125 g Cheddar cheese, grated
  • sea salt and black pepper
  • 25 g plain flour
  • 1 egg, beaten
  • 125 g white fresh breadcrumbs
  1. Boil the potatoes for 15 to 20 minutes or till soft. Drain. Mash with milk and margarine.
  2. Cook the onion and garlic in 1 tbsp of oil over a medium heat for 3 minutes. Add the vegetables and cook for 5 minutes. Stir the vegetables and cheese into the mashed potato, season, cover and chill for 1 hour.
  3. Turn onto a floured surface. Shape into 8 rounds, dip in egg, coat in breadcrumbs and chill for 15 minutes.
  4. Fry burgers over a medium heat for 3 to 4 minutes each side, or until golden brown.
