Healthy Veggie Burgers Recipe

Ingredients (Serves 4)
- 350 g potatoes, peeled and cubed
- 3 tbsp semi skimmed milk
- 1 tsp margarine
- 1 small onion, peeled and finely chopped
- 1 clove garlic, crushed
- 3 tbsp vegetable oil
- 350 g frozen mixed vegetables (thawed and blotted dry)
- 125 g Cheddar cheese, grated
- sea salt and black pepper
- 25 g plain flour
- 1 egg, beaten
- 125 g white fresh breadcrumbs
- Boil the potatoes for 15 to 20 minutes or till soft. Drain. Mash with milk and margarine.
- Cook the onion and garlic in 1 tbsp of oil over a medium heat for 3 minutes. Add the vegetables and cook for 5 minutes. Stir the vegetables and cheese into the mashed potato, season, cover and chill for 1 hour.
- Turn onto a floured surface. Shape into 8 rounds, dip in egg, coat in breadcrumbs and chill for 15 minutes.
- Fry burgers over a medium heat for 3 to 4 minutes each side, or until golden brown.
