Healthy Vegetarian Quorn Satay Recipes

This Quorn Satay makes a great dish for tea parties!
Ingredients (Serves 4)
- 1ΒΌ tbsp finely chopped fresh ginger
- 3 garlic cloves, crushed
- 4 tbsp dark soy sauce
- 2 tbsp vegetable oil
- 2 x 175 g packets of Quorn pieces
- 1 small onion, peeled and finely chopped
- 4 tbsp smooth peanut butter
- 150 ml coconut milk
- 1 tsp sweet chilli sauce
- juice of half a lime
- Place 1 tbsp ginger, 2 garlic cloves, 2 tbsp soy sauce and 1 tbsp oil in a bowl. Add the Quorn, cover and leave for at least 1 hour.
- To make the sauce, heat 1 tbsp oil in a saucepan, add the onion, 1 garlic clove and the remaining ginger and cook over a low heat, stirring occasionally, for 7 to 10 minutes or until the onions are soft. Add the peanut butter, coconut milk, 2 tbsp soy sauce, the chilli sauce and lime juice. Bring to the boil and cook for 5 minutes or until the sauce thickens.
- Remove the Quorn from the marinate and thread onto about 16 thin, wooden skewers. Place under a hot grill for 3 to 4 minutes or until hot. Serve with satay sauce.
