Healthy Vegetarian Mushroom Strudel Recipe

Healthy Mushroom Strudel RecipeA delicious rich, gourmet main course.

Ingredients (Serves 4)

  • 25 g butter
  • 450 g mixed mushrooms, roughly chopped
  • 1 bunch spring onions, trimmed and chopped
  • 225 g reduced-fat garlic and herb soft cheese
  • 4 tbsp chopped fresh chives
  • sea salt and black pepper
  • 4 large sheets of filo pastry
  • 3 tbsp vegetable oil
  1. Heat the butter in a large frying pan. Add the mushrooms and cook, stirring occasionally, for 5 minutes. Add the spring onions and continue to cook for a further 5 minutes or until the mushrooms are soft and all the liquid has evaporated.
  2. Allow the mushroom mixture to cool slightly then stir in the cheese and chives. Season to taste.
  3. Lay one sheet of filo on a clean surface and brush lightly with oil. Lay the second sheet on top of the first and brush with oil. Repeat the process with the remaining 2 sheets. Carefully spread the mushroom mixture over the pastry leaving a border of 2.5 cm around the edges.
  4. Roll up the pastry like a Swiss roll. Carefully transfer to a baking sheet, making sure that the seam is underneath. Using a sharp knife, make a light, diagonal slashes across the top of the pastry.
  5. Brush with the remaining oil and bake at 200°C/400°F for 20 to 25 minutes or until the pastry is crisp and golden. Leave to stand for 5 minutes, then cut into slices. Serve warm with a green salad.
