Healthy Vegetarian Mushroom Strudel Recipe

A delicious rich, gourmet main course.
Ingredients (Serves 4)
- 25 g butter
- 450 g mixed mushrooms, roughly chopped
- 1 bunch spring onions, trimmed and chopped
- 225 g reduced-fat garlic and herb soft cheese
- 4 tbsp chopped fresh chives
- sea salt and black pepper
- 4 large sheets of filo pastry
- 3 tbsp vegetable oil
- Heat the butter in a large frying pan. Add the mushrooms and cook, stirring occasionally, for 5 minutes. Add the spring onions and continue to cook for a further 5 minutes or until the mushrooms are soft and all the liquid has evaporated.
- Allow the mushroom mixture to cool slightly then stir in the cheese and chives. Season to taste.
- Lay one sheet of filo on a clean surface and brush lightly with oil. Lay the second sheet on top of the first and brush with oil. Repeat the process with the remaining 2 sheets. Carefully spread the mushroom mixture over the pastry leaving a border of 2.5 cm around the edges.
- Roll up the pastry like a Swiss roll. Carefully transfer to a baking sheet, making sure that the seam is underneath. Using a sharp knife, make a light, diagonal slashes across the top of the pastry.
- Brush with the remaining oil and bake at 200°C/400°F for 20 to 25 minutes or until the pastry is crisp and golden. Leave to stand for 5 minutes, then cut into slices. Serve warm with a green salad.
