Healthy Stuffed Mushrooms Recipe

Try this delicious filling rich in antioxidants.

Ingredients (Serves 4)

  • 4 large field mushrooms
  • 2 tbsp olive oil
  • 125 g smoked turkey, diced (optional)
  • 1 medium red onion, finely chopped
  • 3 sticks celery, finely chopped
  • 2 cloves garlic, crushed
  • 75 g fresh white breadcrumbs
  • 75 g Brazil nuts, finely chopped
  • 4 tbsp chopped fresh parsley
  • sea salt and ground black pepper
  1. Wipe the mushrooms then remove and finely chop the stalks. Brush the mushroom caps with olive oil and place on a baking sheet.
  2. Heat the remaining oil in a frying pan, add the mushroom stalks, turkey, onions, celery and garlic. Cook over a medium heat, stirring occasionally for 4 to 5 minutes.
  3. Stir in the breadcrumbs, Brazil nuts, parsley and seasoning to taste. Spoon the breadcrumb mixture into the mushrooms, drizzle over a little olive oil and cook at 220°C/425°F for 15 to 20 minutes or until tender. Serve with a green salad.
