Healthy Stuffed Mushrooms Recipe

Try this delicious filling rich in antioxidants.
Ingredients (Serves 4)
- 4 large field mushrooms
- 2 tbsp olive oil
- 125 g smoked turkey, diced (optional)
- 1 medium red onion, finely chopped
- 3 sticks celery, finely chopped
- 2 cloves garlic, crushed
- 75 g fresh white breadcrumbs
- 75 g Brazil nuts, finely chopped
- 4 tbsp chopped fresh parsley
- sea salt and ground black pepper
- Wipe the mushrooms then remove and finely chop the stalks. Brush the mushroom caps with olive oil and place on a baking sheet.
- Heat the remaining oil in a frying pan, add the mushroom stalks, turkey, onions, celery and garlic. Cook over a medium heat, stirring occasionally for 4 to 5 minutes.
- Stir in the breadcrumbs, Brazil nuts, parsley and seasoning to taste. Spoon the breadcrumb mixture into the mushrooms, drizzle over a little olive oil and cook at 220°C/425°F for 15 to 20 minutes or until tender. Serve with a green salad.
