Healthy Spiced Bulgur Wheat Pilaf Recipe

A really satisfying accompaniment to grilled fish, with enough flavors to keep your taste buds happy without between meal snacking.
Ingredients (Serves 2)
- 225 g bulgur wheat
- 450 ml hot vegetable stock
- 2 tbsp vegetable oil
- 1 small onion, peeled and finely chopped
- 1 garlic clove, finely chopped
- 1 tsp each ground cumin, coriander, cinnamon
- ½ tsp each turmeric and cayenne
- 55 g pine nuts, toasted
- 55 g raisins
- 5 tbsp chopped fresh coriander
- juice of half a lemon
- sea salt and black pepper
- Put the bulgur wheat in a large bowl and pour over the hot stock. Cover with a clean tea towel and leave for 30 minutes until the stock is absorbed and the wheat is tender.
- Meanwhile, heat the oil in a frying pan and add the onion. Fry for 5 minutes until softened, then add the garlic and spices. Cook for a further minute. Remove from the heat, cool slightly and stir into the bulgur wheat together with the pine nuts, raisins, coriander, lemon juice and seasoning to taste.
