Healthy Spiced Bulgur Wheat Pilaf RecipeA really satisfying accompaniment to grilled fish, with enough flavors to keep your taste buds happy without between meal snacking.

Ingredients (Serves 2)

  • 225 g bulgur wheat
  • 450 ml hot vegetable stock
  • 2 tbsp vegetable oil
  • 1 small onion, peeled and finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp each ground cumin, coriander, cinnamon
  • ½ tsp each turmeric and cayenne
  • 55 g pine nuts, toasted
  • 55 g raisins
  • 5 tbsp chopped fresh coriander
  • juice of half a lemon
  • sea salt and black pepper
  1. Put the bulgur wheat in a large bowl and pour over the hot stock. Cover with a clean tea towel and leave for 30 minutes until the stock is absorbed and the wheat is tender.
  2. Meanwhile, heat the oil in a frying pan and add the onion. Fry for 5 minutes until softened, then add the garlic and spices. Cook for a further minute. Remove from the heat, cool slightly and stir into the bulgur wheat together with the pine nuts, raisins, coriander, lemon juice and seasoning to taste.
