Healthy Potato And Tuna Medley Salad Recipe

Fast food has a reputation for being unhealthy, but people with a busy lifestyle need food that can be prepared quickly and without fuss. This recipe combines the best of both world – it’s tasty and quick to prepare as well as being high in carbohydrate and protein, and low in fat.

Ingredients (Serves 1)

  • 250 g small new potatoes
  • 2 spring onions, finely chopped
  • 1 tbsp fresh parsley, chopped
  • 2 tsp cider vinegar
  • 50 g tinned tuna in brine, drained
  • sea salt and pepper
  • lemon juice
  1. Cook the potatoes in boiling water until tender (about 5 minutes), then drain and put to one side.
  2. Mix the spring onions, vinegar and a squirt of lemon juice in a bowl, then add to the potatoes.
  3. Gently stir in the tuna and season well. Garnish with parsley and serve while still warm.
