Healthy Potato And Tuna Medley Salad Recipe

Fast food has a reputation for being unhealthy, but people with a busy lifestyle need food that can be prepared quickly and without fuss. This recipe combines the best of both world – it’s tasty and quick to prepare as well as being high in carbohydrate and protein, and low in fat.
Ingredients (Serves 1)
- 250 g small new potatoes
- 2 spring onions, finely chopped
- 1 tbsp fresh parsley, chopped
- 2 tsp cider vinegar
- 50 g tinned tuna in brine, drained
- sea salt and pepper
- lemon juice
- Cook the potatoes in boiling water until tender (about 5 minutes), then drain and put to one side.
- Mix the spring onions, vinegar and a squirt of lemon juice in a bowl, then add to the potatoes.
- Gently stir in the tuna and season well. Garnish with parsley and serve while still warm.
