Healthy Pasta With Herby Tomato Sauce RecipePasta has a reputation for being the best fuel for marathon runners. Indeed, it is a food which has been shown to supply long lasting energy. And, contrary to popular belief, pasta is not fattening – it is the rich, creamy sauces, which so often accompany it, that can pile on the calories and fat. This recipe is ideal for an active diet.

Ingredients (Serves 1)

  • 60 g tagliatelle, packet
  • 1 tsp olive oil
  • ½ small onion, finely chopped
  • ½ garlic clove, crushed
  • 2 medium tomatoes, skinned and chopped
  • 3 black olives, stoned and sliced
  • 5 capers
  • ½ tbsp fresh basil, chopped
  • ½ tbsp fresh oregano, chopped
  • sea salt and pepper
  1. Cook the pasta according to the instructions on the packet (usually about 10 minutes in boiling water). While this is cooking, chop the fresh herbs, onion and tomatoes, and stone and slice the olives.
  2. In another pan, heat the olive oil and lightly fry the onion and garlic until soft. Add the tomatoes and cook gently for 3 minutes before stirring in the capers and sliced olives. Add the chopped herbs and season well.
  3. Drain the pasta, spoon onto a dish and pour over the sauce. Serve immediately with fresh crusty bread and a garden salad.
