Healthy Grilled Tomato, Goat’s Cheese And Olive Salad Recipe

Tomatoes picked from the vine are best for this, but grilling does bring out the flavor of supermarket tomatoes too.
Ingredients (Serves 4)
- 600 g very ripe tomatoes, cut in half
- 2 cloves garlic, sliced
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 110 g fresh soft goat’s cheese with herbs or garlic, chopped
- 50 g pitted black olives
- 2 tbsp freshly chopped basil
- Preheat grill to high. Arrange tomatoes cut side up in a grill pan. Season and scatter with garlic. Drizzle on 2 tbsp of oil.
- Place under the grill as close to the heat as possible and grill for 4 to 5 minutes until softened and starting to color. Remove and put on a serving dish along with any juices.
- Add remaining oil and balsamic vinegar to taste. Allow to cool to room temperature. Scatter the goat’s cheese, olives and basil over the tomatoes. Serve with lots of crusty bread.
