Healthy Feta Cheese Salad Recipe

Serve with soda bread or one of the specialist breads from supermarkets.
Ingredients (Serves 4)
- 100 g lettuce leaves
- 12 fresh coriander leaves
- 10 cherry tomatoes
- 100 g pitted black olives
- 1 small red pepper, sliced
- 200 g pack feta cheese
For the dressing:
- 2 tsp red wine vinegar
- 3 tbsp extra virgin olive oil
- salt and pepper
- 1 tsp freshly chopped parsley
- ΒΌ tsp mustard
- Wash and dry the lettuce. Shred into a large serving bowl and add the coriander, tomatoes, olives and red pepper. Cut the cheese into small chunks and add.
- Put all the dressing ingredients into a screw top jar and shake well. Pour the dressing over the salad ingredients and toss well before serving.
