Healthy Carrot And Crest Triple Decker Recipe

Children often prefer raw vegetables to cooked, so adding grated carrot to sandwiches is a good tip. Crest is easy to grow from seeds and children enjoy watching it sprout. If your child is not keen on wholemeal bread, try using 2 slices of white and one of wholemeal. As they get used to the taste of wholemeal you can substitute all wholemeal for white.
Ingredients (Serves 1)
- 4 tbsp hummus or soft cheese
- 3 slices wholemeal, granary bread
- 30 g grated carrot
- Cress
- Spread 2 tbsp of hummus or soft cheese over one slice of bread. Top with the grated carrot.
- Place the second slice of bread on top of the carrot. Spread the second slice with another 2 tbsp of hummus or soft cheese and then top with cress. Place the final slice of bread on top and cut into 4 triangles.
For variation, fill both sections of the triple decker with tuna, sweetcorn, mayonnaise and cucumber.
