Healthy Carrot And Crest Triple Decker RecipeChildren often prefer raw vegetables to cooked, so adding grated carrot to sandwiches is a good tip. Crest is easy to grow from seeds and children enjoy watching it sprout. If your child is not keen on wholemeal bread, try using 2 slices of white and one of wholemeal. As they get used to the taste of wholemeal you can substitute all wholemeal for white.

Ingredients (Serves 1)

  • 4 tbsp hummus or soft cheese
  • 3 slices wholemeal, granary bread
  • 30 g grated carrot
  • Cress
  1. Spread 2 tbsp of hummus or soft cheese over one slice of bread. Top with the grated carrot.
  2. Place the second slice of bread on top of the carrot. Spread the second slice with another 2 tbsp of hummus or soft cheese and then top with cress. Place the final slice of bread on top and cut into 4 triangles.

For variation, fill both sections of the triple decker with tuna, sweetcorn, mayonnaise and cucumber.
