Healthy Beetroot, Watercress, Walnut And Apple Salad Recipe

Even if you think you don’t like beetroot, this salad could change your mind, it’s all in the exceptional dressing.
Ingredients (Serves 4)
- 1 clove garlic, crushed
- 1 tsp mild curry paste
- ½ tsp fresh grated ginger
- 1 tbsp red wine vinegar
- 4 tbsp olive oil
- 80 g fresh watercress, washed and dried
- 450 g cooked beetroot, roughly chopped
- 4 spring onions, finely chopped
- 1 dessert apple, thinly sliced
- 2 sticks celery, sliced
- 80 g walnuts, roughly chopped
- To make the dressing, mix together the garlic, curry paste, ginger, wine vinegar and olive oil. Season.
- Dress the watercress using about 2 tbsp dressing and arrange on 4 serving plates.
- Gently mix together the remaining ingredients with the rest of the dressing, season to taste and spoon onto the leaves.
