Healthy Avocado And Cucumber Nori Rolls Recipe

Japanese ingredients such as sticky rice, wasabi (an extremely hot paste made from Japanese horseradish) and pickled ginger are now more widely available in supermarkets. If you can’t find them, check out your nearest oriental supermarket.
Ingredients (Serves 4)
- 400 g Japanese sticky rice
- 70 ml rice vinegar
- 1 tbsp caster sugar
- 1 tsp salt
- 9cm piece cucumber
- 1 small avocado, halved, stoned and peeled
- 1 tbsp lemon juice
- 1 tsp wasabi paste
- 3 sheets nori (dried laver seaweed)
- pickled ginger, to serve
- In a deep saucepan, cover rice with water until about 2 cm above it, set aside for 1 hour. Cover pan and set over a high heat for about 5 minutes, reduce heat and simmer gently for 10 minutes. Remove from heat and take lid off. Leave for 10 minutes. Mix vinegar, sugar and salt together until dissolved. Transfer rice to a large bowl and gradually fold in vinegar mixture. Leave rice to cool at room temperature.
- Cut cucumber and avocado into 1.5cm to thick strips. Toss avocado in lemon juice to stop browning.
- Cut the sheets in half and place one piece on a flat surface. Spread 2 to 3 tbsp of rice on the nori, leaving a 1 cm margin along side furthest from you. Spread a small amount of wasabi along center of rice and place half cucumber strips in a row on top. Roll up nori and rice and cut into six pieces. Make another roll with the remaining cucumber, then repeat the process to make two avocado rolls. Serve with a little pickled ginger on the side.
