<li>1 carrot, cut into batons</li>
<li>1 fennel bulb, sliced</li>

<li>Place all the vegetables in a large bowl and mix well.</li>
<li>Cut 4 large squares of baking parchment and place a quarter of the vegetables in the center of each. Bring the sides of the paper up and pinch together to make an open parcel.</li>
<li>Mix together the vermouth, lime juice, lime zest and paprika and pour a quarter of the mixture into each parcel. Season with salt and pepper and add a tarragon sprig to each. Pinch the tops of the parcels together to seal.</li>
<li>Place the parcels in a steamer, cover and cook for 15 to 20 minutes or until the vegetables are tender. Garnish and serve.</li>

To re-heat, put the stack of pancakes, defrosted if frozen, on an ovenproof plate, cover with an inverted ovenproof plate and warm in the oven at 180°C/350°F for 5 to 10 minutes.</li>
<li>To make the batter, sift the flour and salt into a large bowl and make a well in the center. Add the egg and half of the soy milk, and beat well to make a thick batter. Gradually add the remaining soy milk. Cover and set aside for 30 minutes.</li>
<li>To make the filling, remove the pulp from the passion fruit. Mix the arrowroot with enough cold water to make a thick paste. Gently warm the pineapple juice in a small saucepan. Stir in the arrowroot and bring to the boil. Take off the heat, and stir in the passion fruit and lime juice. Sweeten to taste.</li>
<li>Lightly brush an 18 cm, non-stick frying pan with vegetable oil and gently heat. Add enough batter to thinly coat the base. Cook for about 3 minutes and then turn the pancake and cook the other side until golden brown. Transfer the pancake to a plate and keep warm. Cook the remaining pancakes in the same way.</li>
<li>Fold the pancakes in half, fill with the slices of mango and then fold over again. Dust with icing sugar and serve with warm passion fruit sauce.</li>

<p><span style="text-decoration: underline;"><strong>Ingredients (Serves 2)</strong></span></p>
<p>For the oven baked vegetables you will need:</p>
<ul>
<li>2 medium fennel bulbs, quartered</li>
<li>2 large tomatoes, roughly chopped</li>
<li>2 celery sticks, sliced</li>
<li>2 medium sized courgettes, sliced in rounds</li>
<li>6 to 8 black olives, pitted</li>
<li>1 tbsp fresh oregano</li>
<li>juice of ½ lemon</li>
<li>salt and pepper</li>
</ul>
<p>For the sardines you will need:</p>
<ul>
<li>450g fresh sardines (approx 6)</li>
<li>3 handful fresh basil leaves, chopped</li>
<li>1 tbsp sunflower oil</li>
<li>juice of 1 lime</li>
<li>freshly ground black pepper</li>
</ul>
<ol>
<li>Put the vegetables and olives into an oven proof dish. Pour the oilve oil and lemon juice over the vegetables, then sprinkle the herbs, salt and pepper over them.</li>
<li>Turn the vegetables with a wooden spoon to ensure they are all evenly covered. Bake in a moderate oven (200°C/400°F) for 25 to 30 minutes until light brown.</li>
<li>10 minutes before the vegetables are ready, finely chop the basil and stuff about a teaspoon into each sardine. Mix together the sunflower oil and lime juice, pour over the sardines, sprinkle with black pepper and grill for about 5 minutes on each side.</li>
<li>Serve with the vegetables and a garnish with a sprinkling of fresh basil.</li>
