Healthy Pancakes With Mango And Passion Fruit Sauce Recipe

Give pancakes a new, exotic lease of life.
Ingredients (Serves 4)
- 125 g plain flour
- pinch of salt
- 1 egg
- 300 ml unsweetened soy milk
- 6 passion fruit
- 2 tsp arrowroot
- 150 ml pineapple juice
- juice of ½ lime
- caster sugar
- vegetable oil, for frying
- icing sugar, for dusting
- 1 mango, peeled and sliced
- To make the pancakes in advance, interleave them with greaseproof paper, cover and store in a cool place, or freeze. To re-heat, put the stack of pancakes, defrosted if frozen, on an ovenproof plate, cover with an inverted ovenproof plate and warm in the oven at 180°C/350°F for 5 to 10 minutes.
- To make the batter, sift the flour and salt into a large bowl and make a well in the center. Add the egg and half of the soy milk, and beat well to make a thick batter. Gradually add the remaining soy milk. Cover and set aside for 30 minutes.
- To make the filling, remove the pulp from the passion fruit. Mix the arrowroot with enough cold water to make a thick paste. Gently warm the pineapple juice in a small saucepan. Stir in the arrowroot and bring to the boil. Take off the heat, and stir in the passion fruit and lime juice. Sweeten to taste.
- Lightly brush an 18 cm, non-stick frying pan with vegetable oil and gently heat. Add enough batter to thinly coat the base. Cook for about 3 minutes and then turn the pancake and cook the other side until golden brown. Transfer the pancake to a plate and keep warm. Cook the remaining pancakes in the same way.
- Fold the pancakes in half, fill with the slices of mango and then fold over again. Dust with icing sugar and serve with warm passion fruit sauce.
