Healthy Chilli Prawns With Basil Mayonnaise Recipe

Making mayonnaise is easy. And it’s delicious.
Ingredients (Serves 4)
For the mayonnaise:
- 2 egg yolks
- 2 tbsp lemon juice
- ½ tbsp Dijon mustard
- 300 ml light olive oil
- good handful of fresh basil leaves, chopped
For the prawns:
- 1 tbsp olive oil
- 1 garlic clove, peeled and finely chopped
- 1 red chilli, seeded and finely chopped
- 20 raw tiger prawns, peeled but tail left on
- salt and pepper
- First, make the basil flavored mayonnaise. Put the egg yolks, lemon juice, mustard and salt and pepper in a food processor and process until just blended. Keep the motor running and drizzle the oil in through the feeder tube in a slow, steady stream. When all the oil has been added, you should have a think mayonnaise.
- Add the chopped basil leaves, and pulse briefly to mix them in. Transfer the mayonnaise to a bowl, cover and chill until ready to use.
- Heat the olive oil in a large frying pan. Add the chopped garlic and chilli and saute for 1 minute, stirring occasionally. Tip the prawns into the pan and cook for 3 to 4 minutes, until they turn pink. Serve immediately with the basil mayonnaise.
