Healthy Chicken Ramen With Udon Noodles RecipeIngredients (Serves 4)

  • 1.35 liters good quality chicken stock
  • 2.5 cm piece ginger, peeled and finely sliced
  • 2 cloves garlic, halved
  • 2 spring onions, halved
  • 3 tbsp soy sauce
  • 3 tbsp sake
  • 1 tsp salt
  • freshly ground black pepper
  • 4 small heads pak choi, stalks sliced separately
  • 2 cooked chicken breasts, shredded
  • 8 shiitake mushrooms
  • 500 g udon noodles
  • 4 spring onions, sliced
  1. Bring the stock, ginger, garlic and halved spring onions to the boil in a pan. Then simmer gently for 30 minutes.
  2. Strain into a clean pan. Add soy sauce, sake, salt and a little pepper. Bring to the boil and add the pak choi stalks and chicken. Simmer for 2 minutes, then add mushrooms and noodles and cook according to the instructions on the packet. Stir in the pak choi leaves and allow to wilt. Ladle into bowls and garnish with sliced spring onions.
