Filo pastry is a healthier alternative to shortcrust or flaky pastry because it contains much less saturated, hard fat.
Ingredients (Servers 4 to 6 persons)
- 3 to 4 tbsp olive oil
- 700 g leeks, trimmed, cleaned and sliced
- 2 x 420 g cans chicken in white sauce
- sea salt and black pepper
- 4 large sheets filo pastry
- 1 tsp sesame seeds
- Heat 2 tbsp of the oil in a large frying pan, add the leeks and cook, stirring, for about 5 minutes or until soft. Stir in the chicken in sauce and season to taste.
- Transfer the mixture into a shallow ovenproof dish.
- Brush the filo pastry lightly with oil, then scrunch each sheet of filo slightly and place it on top of the chicken and leek mixture. Sprinkle the sesame seeds and cook at 200°C/400°F for 20 to 25 minutes.
