Healthy Turkey Stir Fry Recipe

You can use leftover cooked turkey for this dish or buy ready prepared turkey strips. If you choose uncooked turkey, make sure it is well rinsed and finely sliced.
Ingredients (Serves 2)
- 1 tbsp extra virgin olive oil
- 1 small onion, peeled and diced
- 4 large mushrooms, diced
- 1 small red pepper, diced
- small piece root ginger, peeled and grated
- ½ tsp mild curry powder or paste
- 300 g turkey meat
- 150 g mangetout
- 2 tbsp plain yogurt
- sea salt and black pepper
- Heat the oil in a large stir fry pan or wok and add the onion, mushrooms and pepper, together with the grated ginger and curry powder. Cook over a high heat for 1 to 2 minutes, stirring so the ingredients don’t stick.
- Add the turkey and cook for a further 5 minutes. Add the mangetout and cook for 1 minute. Just before serving, stir in the yogurt, and add salt and pepper to taste.
