Healthy Thai Beef Salad RecipeA spicy salad with an unusual blend of tastes.

Ingredients (Serves 4)

  • 2 x 150 g rump or sirloin steaks
  • 150 g baby sweetcorn
  • 1 large cucumber
  • 1 small red onion, peeled and finely chopped
  • 4 tbsp rice wine vinegar
  • 4 tbsp sweet chilli dipping sauce
  • 3 tbsp fresh coriander, chopped
  • 2 tbsp sesame seeds, lightly toasted
  • 2 spring onions, thinly sliced
  1. Cook steaks on a hot griddle pan until medium rare (about 3 minutes each side). Stand for 10 to 15 minutes then thinly slice.
  2. Cook the sweetcorn in boiling water until tender. Refresh under cold water and drain well.
  3. Slice the cucumber in half lengthways, then using a small spoon, scoop out and discard the seeds, then cut into 3 mm slices.
  4. Place the beef, sweetcorn, red onion, cucumber and coriander in a large bowl. Stir in the rice vinegar and chilli sauce. Mix well. Garnish with sesame seeds and spring onions and serve with warm naan bread.
