Healthy Spicy Lamb With Sweet Potatoes Recipe

Curry pastes are widely available in supermarkets. For this recipe choose a mild one. Serve with naan bread or poppadoms.
Ingredients (Serves 4)
- 6 tbsp natural yogurt
- 3 tbsp mild curry paste
- 4 x 150 g lamb leg steaks
- 2 tbsp olive oil
- 1 onion
- 350 g sweet potatoes
- 4 tomatoes, quartered and seeded
- small bunch fresh coriander, roughly chopped
- sea salt and black pepper
- Mix together the yogurt and curry paste in a non-metalic dish. Add the lamb and turn the steaks a few times to coat them. Cover and marinade in the fridge for 2 hours.
- Peel and slice the onions, peel the sweet potatoes and cut into thin wedges. Heat the oil in a large frying pan, add the onions and potatoes, and fry over a gentle heat for about 7 minutes, tossing occasionally. Add the tomatoes to the pan. Cook for 3 to 4 minutes. Remove and keep warm.
- Remove the steaks from the marinade and put in the pan. Cook for 12 to 14 minutes, turning them halfway. Add the sweet potatoes, onions and tomatoes with the remaining marinade. Cook for 2 to 3 minutes, allowing the marinade to bubble and thicken. Stir in the fresh coriander. Season to taste.
