Healthy Sherry Chicken With Garlic And Rosemary Recipe

A quick and tasty, Mediterranean-style recipe.
Ingredients (Serves 2)
- 350 g potatoes, cut into bite-sized pieces
- 3 garlic cloves, unpeeled
- 2 fresh rosemary sprigs
- 2 chicken breast fillets
- Sea salt and freshly ground black pepper
- 1 tbsp olive oil
- 75 ml dry sherry
- Preheat the oven to 190°C/375°F. Boil the potatoes in salted water for 4 to 5 minutes, then drain well. Spread them out in a large roasting tin and tuck the garlic cloves and rosemary sprigs in between. Season the chicken breasts and sit them on top. Drizzle over the oil and cook for 30 minutes, turning the potatoes occasionally, until golden and tender, and the chicken is cooked.
- Remove the chicken, potatoes and garlic from tin and keep warm. Put the tin on the hob over a low heat. Pour in the sherry and allow it to bubble for a few minutes, with the rosemary. Check and adjust the seasoning. Strain and serve with the chicken and potatoes.
