Healthy Mediterranean Lamb Kebabs Recipe

The fresh herbs in this tasty, versatile dish will ensure easy digestion.
Ingredients (Serves 4)
- 350 g lamb (neck fillet), cut into 2.5 cm cubes
- 1 medium red pepper, seeded and chopped into 2.5 cm squares
- 1 medium onion, peeled and chopped into 2.5 cm squares
- 60 ml extra virgin olive oil
- 1 clove garlic, finely chopped
- 1 tsp each of chopped fresh parsley, thyme, oregano, rosemary and mint
- Juice of 1 lime
- Black pepper, freshly ground
- 4 wooden skewers
- Put the herbs, garlic, olive oil and lime juice into a large bowl, stir and add a good sprinkling of black pepper. Now add the lamb cubes and stir to ensure they are all coated in the marinade. Cover and leave in the fridge for at least 12 hours.
- Thread the skewers with pieces of red pepper, onion and lamb. Grill for 10 to 15 minutes, turning frequently until cooked through. Serve with fresh tabbouleh.
