Healthy Chilli Ginger Roast Chicken Recipe

A delicious roast chicken without added fat.
Ingredients (Serves 4)
- 3 tbsp olive oil
- 4 garlic cloves, peeled
- 2.5 cm piece root ginger
- 2 red chillies, deseeded
- small bunch of fresh coriander
- 1 shallot, peeled
- grated rind and juice of 1 lime
- 1.5 kg chicken, cleaned
- sea salt and black pepper
- Preheat the oven to 190°C/375°F. Put the oil, garlic, ginger, chillies, coriander, shallot, lime rind and juice in a food processor with a little salt. Blend to a rough paste.
- Lift the flap of skin at the chicken neck, ease your hands between the skin and breast and spread the paste over the area, small handfuls at a time. Smooth the skin back over the breast, tucking any excess under.
- Sit the chicken on a rack over a roasting tin. Season and cover the breast with foil. Roast for 1 hour, remove foil and cook for 20 to 30 minutes, until golden and the juices run clear.
