Healthy Chicken Kebabs With Avocado Salsa RecipeServe with warm garlic bread.

Ingredients (Serves 4)

  • 2 ripe avocados, peeled and diced
  • 225 g plum tomatoes, deseeded and diced
  • 1 small red onion, peeled and finely chopped
  • rind and juice of 2 limes
  • 4 tbsp olive oil
  • 4 tbsp chopped fresh coriander
  • salt and black pepper
  • 4 large skinless chicken breasts, cut into 2.5 cm cubes
  1. Mix the avocado, tomato and onion in a large bowl. Whisk together the lime juice and rind with 3 tbsp of the olive oil. Pour the dressing over the avocado mixture. Stir in the coriander and seasoning.
  2. Thread the chicken onto 8 skewers, brush with a little olive oil and place under a hot grill, and cook for 5 to 10 minutes or until the chicken is just cooked to the center.
