Healthy Chicken And Avocado Tortilla RecipeFlour tortilla are the traditional bread of northern Mexico. They are great for packed lunches, enveloping a variety of tasty, healthy fillings.

Ingredients (Serves 1)

  • 1 soft flour tortilla
  • 2 to 3 tbsp guacamole
  • 45 g cooked chicken breasts, thinly sliced
  • 25 g iceberg lettuce, thinly sliced
  • salt and pepper
  1. Spread the guacamole over the tortilla.
  2. Add the chicken slices and lettuce, and a little dressing.
  3. Fold the tortilla in half like an omelet and serve.
  4. For a meat free alternative substitute the chicken with a low fat cheese such as Edam.

For variation, grill half a red pepper, remove the skin and slice. Spread the tortilla with 1 tsp of pesto and fill with 2 slices of smoked ham, the sliced pepper and a handful of rocket.
