Healthy Thai Salmon Fish Cakes Recipe

Easy to make and deliciously spicy to eat.
Ingredients (Serves 4)
- 2 x 213 g cans salmon, drained
- 1 tbsp Thai red curry sauce
- 2 tsp fish sauce
- 1 tbsp corn flour
- Zest of 1 lime
- 2 spring onions, trimmed and finely chopped
- 2 tbsp chopped fresh basil leaves
- 1 egg, beaten
- Sea salt and black pepper
- 3 tbsp plain flour
- 2 tbsp sunflower oil
- Wild rocket, lime juice and extra virgin olive oil
- Flake the salmon and discard any skin and small bones. Put it in a bowl with the red curry paste, fish sauce, corn flour, lime, spring onions, basil and egg. Season and mix well. With dampened hands, shape into12 small fish cakes. Put the flour onto a plate and coat the fish cakes on both sides. Place them on a baking sheet. Cover and chill for 1 hour.
- Heat the oil in a large, non-stick frying pan and fry the fish cakes for 2 to 3 minutes on each side, until golden.
- Serve, garnished with rocket. Squeeze over lime juice and drizzle with olive oil.
