Healthy Stir Fried Vegetables With Scallops And Shrimps Recipe

An exotic, tasty stir fry ready in minutes!
Ingredients (Serves 2)
- 100g queen scallops
- 100g small prawns or shrimps, peeled
- 2 handfuls of bean sprouts
- 1 small white cabbage, finely sliced
- 4 spring onions, chopped
- 100g sugar snap peas
- 1 large carrot, grated
- 2 tsp olive oil
- 1 tsp fresh, grated ginger
- 1 tbsp bottled or filtered water
- Pour in the water and olive oil into a large heavy bottomed frying pan or wok and heat until steaming.
- Toss the scallops and prawns into the pan and cook on their own for a few minutes, then add in all the other ingredients and fry, stirring with a wooden spatula every so often until the vegetables are tender, but retain some of their crispness. Serve immediately.
