Healthy Roasted Monkfish With Yogurt Olives And Capers RecipeThe creamy yogurt dressing here marries perfectly with the monkfish.

Ingredients (Serves 4)

  • 4 x 175 g pieces monkfish
  • grated rind and juice of 1 lime
  • 1 garlic clove, fine chopped
  • 1 tbsp olive oil
  • 4 tbsp natural yogurt
  • 25 g black olives, roughly chopped
  • 1 tbsp capers, chopped
  • 2 tbsp chopped fresh parsley
  • pinch of chilli flakes
  • sea salt and black pepper
  1. Preheat the oven to 190°C/375°F. Prepare the monkfish by pulling away any whitish membrane from the flesh. Place in a roasting tin and sprinkle with the lime rind and juice, garlic, olive oil and salt and pepper. Roast for 20 minutes, until cooked through.
  2. Meanwhile, mix together the yogurt, olives, capers and parsley, and season to taste. Serve the fish and spoon some dressing next to it. Sprinkle with a few chilli flakes and serve with a green salad.
