Healthy Roasted Monkfish With Yogurt Olives And Capers Recipe

The creamy yogurt dressing here marries perfectly with the monkfish.
Ingredients (Serves 4)
- 4 x 175 g pieces monkfish
- grated rind and juice of 1 lime
- 1 garlic clove, fine chopped
- 1 tbsp olive oil
- 4 tbsp natural yogurt
- 25 g black olives, roughly chopped
- 1 tbsp capers, chopped
- 2 tbsp chopped fresh parsley
- pinch of chilli flakes
- sea salt and black pepper
- Preheat the oven to 190°C/375°F. Prepare the monkfish by pulling away any whitish membrane from the flesh. Place in a roasting tin and sprinkle with the lime rind and juice, garlic, olive oil and salt and pepper. Roast for 20 minutes, until cooked through.
- Meanwhile, mix together the yogurt, olives, capers and parsley, and season to taste. Serve the fish and spoon some dressing next to it. Sprinkle with a few chilli flakes and serve with a green salad.
