Healthy Prawn And Pea Pilau Recipe

Ingredients (Serves 4 to 6)
- 2 tbsp vegetable oil
- 1 large onion, peeled and finely chopped
- 225 g small mushrooms, cut into quarters
- 1 level tsp ground cumin
- 1 level tsp cayenne
- 2 tbsp tomato puree
- 225 g long grain brown rice
- 400 g can chopped tomatoes
- 225 g frozen peas
- 750 ml chicken stock
- sea salt and black pepper
- 300 g cooked prawns
- fresh parsley and lemon wedges to serve
- Heat the oil in a large frying pan. Add the onion and mushrooms, and cook over a medium heat for 5 minutes.
- Stir in the spices and tomato puree and cook for 2 to 3 minutes, stirring. Add the rice and stir for 5 minutes or until it starts to turn opaque. Add the tomatoes, peas, stock and seasoning and cook, stirring occasionally, for 35 to 40 minutes or until the rice is tender.
- Stir in the prawns and cook for 2 to 3 minutes or until heated through. Garnish with chopped parsley and lemon wedges.
