Healthy Prawn And Pea Pilau RecipeIngredients (Serves 4 to 6)

  • 2 tbsp vegetable oil
  • 1 large onion, peeled and finely chopped
  • 225 g small mushrooms, cut into quarters
  • 1 level tsp ground cumin
  • 1 level tsp cayenne
  • 2 tbsp tomato puree
  • 225 g long grain brown rice
  • 400 g can chopped tomatoes
  • 225 g frozen peas
  • 750 ml chicken stock
  • sea salt and black pepper
  • 300 g cooked prawns
  • fresh parsley and lemon wedges to serve
  1. Heat the oil in a large frying pan. Add the onion and mushrooms, and cook over a medium heat for 5 minutes.
  2. Stir in the spices and tomato puree and cook for 2 to 3 minutes, stirring. Add the rice and stir for 5 minutes or until it starts to turn opaque. Add the tomatoes, peas, stock and seasoning and cook, stirring occasionally, for 35 to 40 minutes or until the rice is tender.
  3. Stir in the prawns and cook for 2 to 3 minutes or until heated through. Garnish with chopped parsley and lemon wedges.
