Healthy Red Fruits With Foaming Sauce RecipeIf you are looking for a delicious dessert that is tasty but still nutritious, then you should try out the red fruits with foaming sauce recipe. Ingredients include red currants, cranberries, apple juice, and strawberries. If you wish, you can use another sugar substitute instead of the muscovado sugar.

No one will ever believe that this dish could be healthy, and your guests will surely be begging you for the recipe. You can even add some low fat whipped cream to finish this delectable dessert off.

Ingredients (Serves 4)

  • 225 g red currants, washed and trimmed, thawed if frozen
  • 225 g cranberries
  • 75 g light muscovado sugar
  • 200 ml unsweetened apple juice
  • 1 cinnamon stick, broken
  • 300 g small strawberries, washed, hulled and halved

Sauce

  • 225 g raspberries, thawed if frozen
  • 2 tbsp fruit cordial
  • 100 g marshmallows
  1. Place the red currants, cranberries and sugar in a saucepan. Pour in the apple juice and add the cinnamon stick. Bring the mixture to the boil and simmer gently for 10 minutes until the fruit has just softened.
  2. Stir the strawberries into the cranberry and sugar mixture and mix well. Transfer the mixture to a bowl, cover and leave to chill for about 1 hour. Remove and discard the cinnamon stick.
  3. Just before serving, make the sauce. Place the raspberries and fruit cordial in a small pan, bring to the boil and simmer for 2 to 3 minutes until the fruit is just beginning to soften. Stir the marshmallows into the raspberry mixture and heat through, stirring, until the marshmallows begin to melt.
  4. Transfer the fruit salad to serving bowls. Spoon over the raspberry and marshmallow sauce and serve.

“This sauce is delicious poured over low fat ice cream. For an extra colorful sauce, replace the raspberries with an assortment of summer berries”.

Healthy Almond And Sultana Cheesecakes RecipeIf you are a cheesecake lover, but also like to eat healthy, then the healthy almond and sultana cheesecakes recipe is an ideal choice for you. It is a delicious cheesecake recipe but combined with the nutrition of almonds and lime juice. The recipe is a fun idea to take to any gathering or get together.

The ingredients are few and inexpensive, so it is a dish that you can make all the time and the best part of all is that you are still getting the nutrition that you want.

Ingredients (Serves 4)

  • 12 Amaretti di Saronno biscuits
  • 1 medium egg white, beaten
  • 225 g skimmed milk soft cheese
  • ½ tsp almond essence
  • ½ tsp finely grated lime rind
  • 25 g ground almonds
  • 25 g caster sugar
  • 60 g sultanas
  • 2 tsp powdered gelatin
  • 2 tbsp boiling water
  • 2 tbsp lime juice
  • 25 g flaked toasted almonds and strips of lime rind, to decorate
  1. Preheat the oven to 180°C. Place the biscuits in a clean plastic bag, seal the bag and using a rolling pin, crush them into small pieces. Place the crumbs in a bowl and bind together with the egg white.
  2. Arrange 4 non stick pastry rings or poached egg rings, 9 cm across, on a baking sheet lined with baking parchment. Divide the biscuit mixture into 4 equal portions and spoon it into the rings, pressing down well. Bake for 10 minutes until crisp and leave to cool in the rings.
  3. Beat together the soft cheese, almond essence, lime rind, ground almonds, sugar and sultanas until well mixed.
  4. Dissolve the gelatin in the boiling water and stir in the lime juice. Fold into the cheese mixture and spoon over the biscuit bases. Smooth over the tops and chill for 1 hour until set.
  5. Loosen the cheesecakes using a small palette knife ans transfer to serving plates. Decorate with toasted almonds and lime rind and serve.

“If you prefer, substitute the sultanas with chopped no-need-to-soak dried apricots”.

Cheese Hearts With Strawberry Sauce RecipeIf you are looking for a tasty dessert that is also going to be a bit nutritious, then the cheese hearts with strawberry sauce recipe is a great option for you. You wouldn’t imagine that this delicious dish could be healthy in any way but it actually is. The egg white cottage cheese and strawberries add a shot of nutrition to this tasty delight.

It is a great dish to make after any dinner, and especially when you are having guests over. Accompany it with a glass of fruit juice or water to add to the nutrition.

Ingredients (Serves 4)

  • 150 g low fat cottage cheese
  • 150 ml low fat natural fromage frais
  • 1 medium egg white
  • 2 tbsp caster sugar
  • 1 to 2 tsp vanilla essence
  • Rose scented geranium leaves, to decorate

Sauce

  • 225 g strawberries
  • 4tbsp unsweetened orange juice
  • 2 to 3 tsp icing sugar
  1. Line 4 heart shaped moulds with clean muslin. Place a sieve over a mixing bowl and using the back of a metal spoon, press through the cottage cheese. Mix in the fromage frais.
  2. Whisk the egg white until stiff. Fold into the cheeses, with the caster sugar and vanilla essence.
  3. Place the moulds on a wire rack set over a roasting tin. Spoon the cheese mixture into the moulds and smooth over the tops. Leave to chill for 1 hour or until firm and well drained.
  4. To make the sauce, wash the strawberries under cold running water. Reserving a few strawberries for decoration, hull and chop the remainder. Place the strawberries in a blender or food processor with the orange juice and process until smooth. Alternatively, push through a sieve to puree. Mix with the icing sugar to taste. Cover and leave to chill until required.
  5. Remove the cheese hearts from the moulds and transfer to serving plates. Remove the muslin, decorate with the reserved strawberries and geranium leaves and serve with the sauce.
