Healthy Dates And Walnut Scones Recipe
Posted on January 28, 2009 by healthy-chef
Adding yogurt to a scone mixture instead of milk gives them a much softer finish.
Ingredients
- 250 g plain flour
- ½ tsp sea salt
- ½ tsp baking powder
- ½ tsp cinnamon
- 50 g butter
- 1 tbsp soft brown sugar
- 25 g dates, chopped
- 25 g walnuts, chopped
- 150 ml natural yogurt
- a little milk for brushing
- 1 tbsp demerara sugar
- Preheat the oven to 220°C/425°F. Sift the flour, salt, baking powder and cinnamon into a mixing bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar, dates and walnuts, then enough yogurt to mix to a soft dough. Lightly knead on a floured surface and roll out to 2 cm thickness. Cut out 5 cm rounds with a pastry cutter. Transfer to a lightly greased, floured baking sheet.
- Brush with milk and sprinkle with sugar. Bake for 12 to 15 minutes, until risen and golden. Cool on a wire rack.
