Healthy Creamy Rice Pudding With Dates Recipe

Not all desserts have to be bad for you. This delicious rice pudding is sweetened with dates and works as well with soy milk as with cow’s milk. Use fresh dates rather than the pre-chopped cake making variety.
Ingredients (Serves 4)
- 5 tbsp pudding rice
- 5 fresh dates, stoned and chopped
- 50 g caster sugar
- 850 ml soy milk or cow’s milk
- 15 g butter or margarine
- Preheat the oven to 150°C / 220°F. Mix the rice, dates and sugar with the milk and pour into the lightly buttered 1.2 liter ovenproof dish. Cut the butter or margarine into small pieces and dot over the rice mixture.
- Bake for 2 hours, stirring every 30 minutes, until the rice is tender. Serve immediately with a drizzle of soy or single cream, or a spoonful of Greek yogurt.
