Healthy Chocolate Bread Pudding Recipe

Going dairy free doesn’t mean you have to miss out on old fashioned favorites like delicious bread pudding. Serve this with dairy free cream.
Ingredients (Serves 4)
- dairy free margarine or vegetable oil
- 6 thick slices of white bread
- 75 g pitted prunes, roughly chopped
- 2 eggs, beaten
- 500 ml chocolate flavored soy milk
- 50 g caster sugar
- 1 tbsp demerara sugar
- Lightly grease a shallow ovenproof dish with dairy free margarine or brush with a little vegetable oil. Remove the crusts from the bread and cut each slice into 4 pieces. Arrange the bread in overlapping layers in the dish, with prunes in between the layers.
- Whisk together the eggs, soy milk and caster sugar. Strain the mixture through a fine sieve, pour over the bread and leave for 5 minutes. Sprinkle with the demerara sugar.
- Place the pudding in a roasting tin containing enough hot water to come halfway up the side of the dish. Bake at 180°C/375°F for 30 to 40 minutes or until the custard is lightly set. Serve warm.
