Healthy Chocolate And Star Anise Souffles Recipe

The spice star anise is now widely available.

Ingredients (Serves 2)

  • 75 ml milk
  • 1 whole star anise
  • 15 g butter
  • 15 g plain flour
  • 15 g cocoa
  • 15 g caster sugar
  • 2 small eggs, separated
  1. Put the milk and star anise in a small saucepan and heat until almost boiling. Set aside for 30 minutes, then strain.
  2. Melt the butter in a large pan and stir in the flour and cocoa. Cook for 1 minute, remove from the heat and stir in the milk to make a sauce. Leave to cool, then beat in the sugar and egg yolks.
  3. Whisk the egg whites to stiff peaks and stir a quarter of them into the chocolate mixture. Carefully fold in the rest and spoon into buttered 150 ml souffle dishes. Bake at 190°C/375°F for 15 to 20 minutes, until well risen and just set. Serve immediately.
