Healthy Spicy Spaghetti With Capers Recipe

A rich, aromatic dish to tickle the taste buds.

Ingredients (Serves 2)

  • 200g to 225g spaghetti
  • 2 cloves garlic, finely chopped
  • 1 fresh red chilli, deseeded and chopped
  • 1 tbsp capers
  • 450g tomatoes, skinned and quartered
  • 1 dessertspoon fresh basil, chopped
  • 1 dessertspoon fresh parsley, chopped
  • 1 tbsp tomato puree
  • 100g black olives, pitted & chopped
  • 2 sticks of celery
  1. Heat the oil in a medium saucepan then add the garlic, celery, chilli and herbs. Cook until a pale golden color, then add the other ingredients (except for the spaghetti) and simmer on a low heat for about 30 minutes to reduce to a rich sauce.
  2. While the sauce is cooking, fill a large saucepan with water and bring to the boil. About 10 minutes before the sauce is ready, add the spaghetti to the boiling water and pour some olive oil into the water to stop the strands sticking together. When the spaghetti is tender drain away the water and mix in the sauce. Serve immediately with a garnish of fresh herbs.
